Strawberry Cream Flan

A delicious dessert … for a great party.

Ingredients

  • Pastry:
  • 2 cups of flour

  • 2 tbsp of sugar

  • 1/4 tsp salt

  • 1 cup of butter, softened

  • 2 egg yolks

  • Cream Filling:
  • 1 cup of heavy cream

  • 2 tbsp of sugar

  • 2 tbsp of rum or liqueur

  • Berries:
  • 2 pints of strawberries

  • 1/2 a cup of sugar

  • 1/4 cup of rum or liqueur

  • Glaze:
  • 1/2 cup of red currant jelly

Directions

  • Pastry
  • Toss flour, sugar and salt in bowl. Work in butter with fingertips.
  • Add egg yolks. Blend to make dough smooth. Chill for one hour.
  • Roll to fit a 9 x 13″ pan. Prick well with fork.
  • Bake at 425°F for 20 minutes or until golden brown.
  • Cream Filling:
  • Whip cream and sugar until stiff. Add rum.
  • Berries:
  • Wash and hull berries. Sprinkle with rum and sugar to taste.
  • Spread the cream in the baked flan. Arrange strawberries in cream, close together, points up.
  • Melt the Jelly in a bowl over hot water and brush on berries to glaze.

It’s my favourite dessert … that I’ve just passed on to my granddaughter !
Serves 12 to 18 persons.
