Auntie Betty’s Apple Cake

A wonderful, simple and tasty recipe.


  • 4 or 5 apples, peeled and sliced

  • Sugar and cinnamon to sprinkle over the apples

  • 2 eggs

  • 1/2 cup of vegetable oil

  • 3/4 cup of sugar

  • 3/4 cup of flour

  • 1 tsp baking powder

  • A pinch of salt


  • Peel and core the apples, slide into an 8 or 9 inch pan. Sprinkle with sugar and cinnamon.

  • Beat eggs, oil and sugar, add flour and baking powder and salt. Mix well. Pour batter over the apples.
  • (Optional: sprinkle with nuts.)
  • Bake at 350°F for 40 to 45 minutes, or ‘until a toothpick is clean’.
